Healthy salad of fennel, mango and walnuts

Sometimes salads are created a bit by chance, depending on what you have in the fridge or find fresh at the market. This recipe was created during the winter holidays when, in the mountains with our friend Manu, everyone had brought the fresh ingredients that they had at home and that would have perished before we returned. We created this recipe by combining fennel, celery and mango. The taste is really amazing, we then reworked it several times and now we propose the final version with some additions … at least until the refrigerator does not inspire us with other variants! Try it yourself, it can be a perfect appetizer or side dish.

Ingredients for 2 people

  • 1 fennel
  • 1 mango
  • 2 sticks of celery
  • 4 radishes
  • 10 walnuts
  • 1 lemon
  • Fresh coriander
  • Extra virgin olive oil
  • salt
  • pepper

Preparation

Cut the fennel into quarters and slice it finely. Cut the celery into rounds and the radishes into quarters.

Put these ingredients into a bowl and season them with lemon juice so they do not oxidize and then place them in a large serving dish. Add the diced mango, walnuts and some coriander leaves. Season with oil, salt and pepper.
